Hominy Chicken "Enchilada's"
I am sure you could also make different "sizes" of pots or pans, but we have a decent size family so we like leftovers if possible. Also, you could also bake it with the Cheese on top instead of mixed in, but either way works!
- 36 oz. Can of White Hominy
- 13 oz. Can of Chicken Breast, shredded into fine pieces
- 26 oz. Can of Cream of Mushroom Soup
- 4 oz. Can of Diced Green Chilies
- 1 Cup of Shredded Cheddar Cheese
- Mrs. Dash Table Blend
- Mrs. Dash Garlic & Herb Blend
- Mrs. Dash Onion & Herb Blend
- Fresh Tomato, diced

What an interesting idea for enchiladas! I'm not sure I've ever had hominy, but this looks *really* good.
